Last night we had sliders for dinner and I made truffle fries to go along with them. These were inspired by the fries you can get at Yardhouse.
Easy enough to make:
- Thinly slice your washed potatoes in shoestrings.
- Blanch the fries in either water or oil (I went with boiling water this time.)
- Drain for a bit then fry in oil.
- When they're all fried, toss with a few dashes of truffle oil, grated Parmesan , and chopped parsley.
