It was too nice to sit inside today. We ran a few errands and stopped for ice cream. My favorite is this:
Sweet Cream, Cheesecake, and Oreo Filling mixed with Heath bar from Cold Stone Creamery. We haven’t been in a while so this was a great treat.

Roasted Lamb Shoulder with Vegetables.
I was going to get all fancy with the lamb shoulder and then I heard someone down the hall firmly suggest I just get it in the oven already. I took a knife and made sure the roast was really dead, filled the fresh incisions with garlic and rosemary. I put it in a roasting pan with some vegetables, vegetable stock, and red wine. Seasoned to taste. Came out pretty good, cooked it medium so all the guests could enjoy it. I used a rue to throw together a gravy from the pan for the roasted potatoes I had sitting in the oven the whole time. Photo courtesy of my son, thanks Chayce.
Tzatziki!
Ingredients:
- 1 small container of Greek Yogurt (about 7-8oz)
- 2-3 Garlic cloves, large, pressed
- 2 dashes of Dill
- ½ English cucumber, grated and strained
- ½-1 Lemon, squeezed
- 6 Mint leaves, finely minced
- Salt and Pepper to taste
The recipe is very simple. The cucumber needs to have the moisture squeezed out of it, I usually use cheesecloth if I have some on-hand; you could use a paper towel, just squeeze slowly so it doesn’t tear. Add all the ingredients to a bowl, mix and chill.
Great with bread, lamb, anything really. If you like a little more bite, add more garlic.

Had lunch and dinner out today. First, Kow Pad Krapow with Pork @ Thai Papaya in Newport News, VA. Very good, just the way I like it.
Grilled Chicken with a Balsamic Vinegar and Herb Marinade. I added honey and ginger to the marinade; next time I’ll leave those out and add a little brown sugar.

Herb Roasted Potatoes

We had family visiting from Indiana this past week. My niece loves pancit and while she was visiting she wanted to give cooking it a shot. So with a little guidance she was able to put dinner together for us!
Last year we drove by this little Lebonese grocer and decided to check it out. We found out a few of things that make this place great:
1. It has a lunch counter
2. Spices are very affordable in their grocery
3. Friendly service
Leila’s Mediterranean Groceries & Deli of Virginia Beach Blvd. has a great lunch menu but they close early. I do love the olives—antipasto—you get before your meal. I highly suggest the baba ghanoush; if you order fries for some reason, be prepared to wait. They have to heat the oil up to get those going.
Speaking of the kitchen, while you’re browsing around the grocery you can peek in and watch them cook the food if you like. The Beef Shawarma is pictured in the post. If you’re in the area check it out!
I’m looking forward to the day when I can give this site the attention it deserves. Between working full-time and attending university in the evening, my spare time is rare. I’m almost there though and when I can, I’ll start adding posts that are a little more fleshed out than the quickies I’m tossing up.
